In the past week, I have had a lot of house guests and social events. Last Saturday we went to a comedy show with friends and then invited them back to our house to watch the UFC fights late into the night. The next day, Sunday, we drove to the annual picnic for my dad's side of the family about two hours from my house. Immediately upon our return home that evening, we welcomed a couple of dear friends that were in town from France, and they stayed with us until Tuesday afternoon. The following Friday, my father and his girlfriend came into town for a concert and stayed overnight at our house. As soon as I shut the door behind them early Saturday morning, I got to work on prepping the house for the next round of overnight guests –fifteen past exchange students. They were arriving in just a few hours for the annual Rotary Rebound Weekend, and I had a lot to do during that time. From changing out the sheets and towels to setting up the patio furniture and cleaning out the entire fridge (they all bring a dish to pass from their host country for an Around the World Dinner). I did not stop cleaning, dusting, vacuuming, etc. all day because these students camp out in my basement for the night, and I want to make sure the experience is as comfortable and luxurious as possible for them. I look forward to this weekend all summer, and although I knew the cleaning and organizing I just did would have to be done again in exactly 24 hours (after little to no sleep), it is 100% worth it! This morning I left with the students to meet up with their parents at the Rebound Luncheon, where we get to hear the students' incredible stories of the year they just spent abroad. After that, my husband and I came home to clean the counters, vacuum once again, run more loads of laundry, unload the dishwasher and store the patio furniture cushions. We have become pretty good at this routine together over the years. He then went to our office to work out and prep for the workweek, and I sat down to enjoy the rest of the book that I started a couple of days ago. We were both exhausted, so when dinner time came, I decided to make do with what I had on hand while dirtying as few dishes as possible! This dish requires minimal effort or culinary talent, dirties few dishes, and can be done with some basic pantry items along with whatever veggies you have in the fridge or can grab out of your garden. Spoon your delicious, healthy creation into a bowl, pour yourself a glass of iced tea and enjoy! I got back to my book and smiled about the fact I only had one dish to wash, which my sweet husband kindly did for me! ~If you want to, you can add chicken or another protein to this. My husband and I found it perfectly satisfying as a vegetarian dish.

La cuisineI love to cook. My kitchen is one of my happy places because I get to be creative there. Although I own many cookbooks, I most often throw meals together based on what I have on hand - so it is rare that I make a meal the same way every single time. I may follow a recipe initially, but tend to use them more as guideline and do my own thing. Most of what I make is based on classic home cooked meals that I had while living in France, and my love of market fresh produce. Although we are able to buy many items year round, I base meals on what is currently in season. My philosophy on food is to keep it fresh, colorful, and flavorful.
